Today’s Blogger Spotlight is My Adventure in Mommyland.
She works part time as a COTA/L in an elementary school and spends the rest of the time home with her little girl. She has some delicious ideas and recipes which your kids can help and join in on the fun! Here is one that looked particularly delicious!

Cranberry Apple Crisp Recipe

Today Emma & I made apple crisp together! It was sooo easy and she was really getting into it! It was her first time baking with mommy (and it won’t be her last since we had so much fun)!! I especially liked that the recipe called for unpeeled apples…I HATE peeling apples lol.

Cranberry Apple Crisp

(Preheat oven to 350F)
3-4 large apples (unpeeled, cored and cut into 1″ pieces (about 4 cups)
2 c. whole fresh cranberries
3/4 c. sugar
1 1/2 c. oats
1/2 c. light brown sugar
1/3 c. flour
1/2 c. chopped pecans
1/2 c. unsalted butter (melted)
Vanilla ice cream (optional)
Butter a 2 qt baking dish. In a large bowl mix together apples, cranberries, and sugar. Spoon into prepared baking dish.

Scooping apples into the bowl. She kept trying to sneak in bites when I wasn’t looking!
In the same bowl mix together oats, brown sugar, flour and pecans. Stir in melted butter.

 

Sprinkle oatmeal mixture evenly over the top of the apples. Bake at 350F for 45 minutes, until bubbly and apples are tender. Serve warm or cold with a scoop of ice cream.
