 Frozen Yogurt Fruit & Granola Cup Recipe
This frozen yogurt fruit & granola cup after school snack is a delicious treat! We’ve been finding creative ways to use up yogurt when we have way too much to eat before it expires. Two of my kids have been flat on their back this week with the flu – and it is BAD! They haven’t been wanting to eat much so I’ve been freezing yogurt bits for them to suck on.

Frozen Yogurt Fruit & Granola Cup Ingredients:

1 Tbsp. Butter
1 cup of granola
1 cup of mini marshmallows
2 cups of yogurt
fresh berries
muffin pan – any size
non stick cooking spray

The AWESOME thing about this snack idea is that you really don’t NEED to follow a recipe on it. I just guesstimate it and toss it in together. To begin you’ll want to melt your butter and marshmallows on low heat on the stove to and then add in your granola. Stir well to mix it all up.

Spray your muffin pan with non-stick cooking spray. I actually used a mini muffin pan AND a regular sized muffin pan. This works for any size!
Believe it or not this is the trickiest part! Add small spoonfuls of your granola mix into each muffin “cup” and press firmly down. For the mini muffin pans I just put a granola layer on the bottom. For the regular sized muffin pan I pressed the granola up against the sides as well leaving a depressed area for the yogurt in the middle. (see photos below)

Once you’ve finished pressing our your pan(s) of granola add a spoon or so of yogurt right into the middle on top! Above you can see that for my mini pans I did NOT fill it all up with granola! I added enough in the middle to pile up. This mini muffin pan is more of a bite sized snack!

Place 2 berries of your choice on top and then place into the freezer.

The frozen yogurt fruit & granola snacks can be popped out of you muffin pan with a butter knife and frozen in a bag or storage container until you’re ready to eat them! Don’t they look so delicious!? The only thing to note is that if they begin thawing they will begin to soften! It is yogurt after all!

I find that the bite sized mini cups are perfect for kids or a quick bite on the go. Above is my larger (regular sized muffin pan) yogurt cup and you can see how the yogurt is contained inside of the granola sides. You also have room for 4-5 berries on top. These also pop out of the pan easily with a swipe of a butter knife and can be stored for later.
